Almond Protein Cookies

These cookies are really easy with only 4 ingredients and relatively healthy as well!

  • 1 cup nut butter or puree (I used almond puree)
  • 3/4 cup protein powder (I used one with added vanilla)
  • 1/4 cup almond flour
  • 2 eggs (medium size)
  • sweetener of your choice if you want/need to. Depending on your use of sweetener probably between 1 tbs to 1/4 cup)

Pre-heat oven to 180° Celsius (approx. 365°F) and prepare your baking sheet with parchment paper or a silicone mat or grease it with butter/baking spray.

Mix the nut puree with the eggs and whisk it ( use a food processor or a handheld electric mixer) before adding the dry ingredients. The batter becomes a little bit crumbly.

Form little balls, flatten them and put them on your baking sheet. They don’t rise while baking, so you can space them closer together than I did on that picture. With a fork you can flatten them more and get some kind of structural surface.

Put the sheet into the oven and bake for approx. 12 minutes until the edges turn golden brown. The flatter your cookies are, the shorter the baking time will be. Enjoy!
