I was actually quite unmotivated to cook this day, as there were problems with my Instagram account and all in all things weren’t going as planned in my life. But I had the pork chops in my fridge, and they already were a day over their “best before” date, and I didn’t want to waste them… so I started cooking without knowing what would come out of it.
And acually, I’m quite pleased with it – a yummie meal under 300 calories per serving! So if you want an additional side dish like rice or quinoa, that’s totally okay!
- pork chops (mine were around 65g per piece)
- frozen vegetable mix or fresh veggies as you like; I had a mix of carrots, peas and corn
- 1 small can of coconut milk (165ml)
- Olive oil and herbs to taste
Heat the olive oil in a big pan to sear the meat. In the meantime I thawed the frozen veggie mix in the microwave; you can cook them in a pot as well (same if you are using fresh veggies).
After the meat is browned on both sides, put the cooked veggies into the pan. Add the coconut milk and stir. Put in the herbs to your liking and let it simmer for a few minutes. Make sure your meat is cooked throughout before turning the heat off.
