Vanilla Cheesecake

Ever since I watched “Golden Girls” as a kid, I loved cheesecake. Recently, I got back into re-watching the series, and I decided to try to make my own cake one night.

  • 1 pkg (9 oz) caramel cookies by Biscoff (I don’t know any other trade name for it; it may be different where you live. You can use any kind of cookies, I think; it will change the overall flavour maybe a little bit if they are not caramel flavoured though.)
  • 1 stick unsalted butter
  • 24 oz cream cheese
  • 9 oz Skyr (I used vanilla flavour)
  • 5 eggs (medium sized)
  • 8 oz whipped cream (unwhipped)

Pre-heat your oven to 350°F / 175°C (if you have it, use the convection setting).

Crush the cookies and mix them thoroughly with the melted butter. Press the dough flat into your baking form and bake for 15 minutes.

In the meantime mix the cream cheese with the eggs in a food processor or a handheld mixer.

Add skyr and cream to it. If you want to, you can add some sweetener here, or additional flavours. Due to the skyr being vanilla flavoured and a bit sweetened, I didn’t add any sweetener, but I can understand if your want to add some. But be cautious with the amout because it really doesn’t need a lot.

Not put the misture onto the already baked cake base and bake for another approx. 60 minutes. Turn off oven just before the sides and top turn golden brown and let cool in the half opened oven.

A round baking tin probably makes a better form for cheesecake than my loaf pan, but I didn’t have one handy.

You can store the cheesecake for a few days in the fridge.
