Pumpkin with pear and bacon

I love me some pumpkin in the colder time of the year! And I love me some bacon as well, so this meal is just about perfect for me!

  • 1 medium sized Hokkaido pumpkin
  • 100g (3,5 oz) bacon
  • 1 pear (you can use an apple as well, or a small melon if you like)

Pre-heat oven to 180°C (360°F). Scrub the pumpkin, because the peel will stay on. Then cut it in pieces approx. 2-3 cm (1 in) wide. Cut your chosen fruit as well in pieces of similar size.

Wrap the bacon strips around the pumpkin and around a few pieces of fruit as well. Put all of them on a baking sheet and then cook for around 20 minutes in the oven (or until your pumpkin is soft). Enjoy it either as a side dish or a full meal. I love it as a full meal, because the pumpkin is very satiable. From one pumpkin I can make around 3 meals, but my portion sizes are more on the smaller side.
