Even though I usually love to eat salads more in Summer, and during Winter soups and stews, in this case this salad is heay and rich due to the feta, and keeps you satiated for a really long time. For one serving you’ll need:
- 1/2 salad cucumber
- 2 cups of cherry tomatoes
- 1/2 to 1 cup feta (depending on your taste an how many calories you want to eat – I really love feta and would eat almost a package in one serving. But it packs quite some calories, so choose wisely depending on your needs)
- strawberries optional (I had some leftovers and they fit the taste)
- juice of one organic lemon
- olive oil, salt, basil
Cut the cucumber to your liking. In my salad the cucumber has to be peeled and sliced, but you can also dice it and keep the peel on, if it doesn’t bother you. Cut the cherry tomatoes in halves and put them in a bowl with the cucumber. Add diced feta and cut strawberries (again just how you like them). Sprinkle with the lemon juice and 2 Tbs olive oil. Season with salt and basil (dried or fresh, again as you like it or as it is available to you) and then enjoy your meal!
